Happy St. Patrick's Day! Spring has almost sprung, the days are getting longer, and we finally have some warmer weather! As you emerge from your winter routine, consider this Spring inspired overnight oats as a healthy jumpstart to your day!
This recipe includes quinoa in addition to old fashioned oats and chia seeds for some extra protein and whole grain goodness! It doesn't call for protein powder, but you could definitely add some (I'd recommend vanilla) if you are looking for some extra protein to fuel your morning. The St. Patrick's Day green hue comes from matcha powder. Matcha has some amazing health benefits and is packed with antioxidants!
Recipe (2 servings):
½ cup old fashioned oats
½ cup cooked quinoa
1 tbsp chia seeds
1 tsp organic matcha powder
1 ¼ cups unsweetened almond milk
1 tsp vanilla extract
1 tbsp 100% pure maple syrup
Instructions:
Combine dry ingredients first, then add remaining ingredients. Mix well and refrigerate overnight. Top with: 1 sliced banana and sprinkles of cacao nibs, raw pumpkin seeds, and toasted coconut chips.
